6 Ingredient Blender Lemon Pie вђ Live Play Eat Mix until mixture is smooth. add in the lemon juice. mix at low speed until completely and evenly incorporated. when pie crusts are cooled, use a 1.5 tbsp cookie scoop to scoop the filling and release it directly into each of the cooled crusts. use a spatula or spoon to smooth and even out the surface if needed. Whisk until lemon juice is fully incorporated. the mixture should be thick. add heavy cream to a separate large mixing bowl. beat on high speed with a mixer until medium to stiff peaks form. using a spatula, fold the whipped heavy cream into the lemon mixture. i added the whipped heavy cream in 3 batches. In a large bowl, whip heavy whipping cream to stiff peaks. do not over whip or it will turn into butter. (if desired, reserve 1 2 cup whipped cream for garnish, add 1 2 tbs powdered sugar to sweeten). fold lemon mixture into whipped cream. scoop and smooth lemon cream into 9" graham cracker crust. In a bowl, whisk the sweetened condensed milk and lemon juice together until combined. carefully fold in whipped cream until ingredients are well distributed. pour into prepared graham cracker crust. add whipped cream and lemon garnishes now or when ready to serve. refrigerate 4 hours, or overnight.
